La Bontà di Fiesole is made from olives grown at high altitude along a steep slope in the township of Fiesole (outside of Florence), where fabulous olive oil has been produced ever since Etruscan times.

In fact, a long unused limestone quarry lies buried in the forest above our groves, and the main farm buildings where the oil is produced and stored are made with the golden brown native stone. The mineral content of the soil gives La Bontá di Fiesole its spicy aroma.

About Our Microclimate

Like grapes, olives reflect their microclimate. The area between Florence and Lucca produces the best olive oil in the world largely because this is where the Apennine mountains swerve from their roughly north-south orientation to run east-west towards Pisa and the coast. That means olives grown on the southern slope of the mountains in this region effectively have a balcony on the sun. In addition, the slope along which the olive groves of La Bontà di Fiesole lie forms a gentle bowl facing the southwest. Late into the evening, when olive trees elsewhere are lost in shadow, our groves are still absorbing light.
